Something To Blog About: Black Bean and Corn Salsa and Chocolate chip Scones

She is sharing two of her popular recipes with us today.  The first is Black Bean and Corn Salsa which is a great summer appetizer (or meal!) and the second is chocolate chip scones which would be great with Coffee for breakfast or as a dessert.

Black Bean and Corn Salsa
1- 16 ounce bag of frozen corn (Thawed some, but still cold)
1-15 ounce can of black beans (drained and rinsed)
1 red bell pepped-seeded and chopped
1 small red onion-chopped
1 tomato-chopped
A handful of cilantro-chopped (I like a lot so I added a generous amount!)
Salt, Cumin and Garlic powder to taste-I just kept adding and trying it until it tasted good! :)
The juice of one lime
Mix all the ingredients together in a bowl. We like it best with scoop tortilla chips.

If you can, make it a few hours or even the night before you are planning on eating it and let it sit in the fridge. It's one of those recipes that tastes better the next day!



Ingredients1 3/4 cups all-purpose flour
1/3 cup white sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 stick unsalted butter, chilled and cubed
1/3 cup semisweet chocolate chips
1/2 cup orange juice

DirectionsPreheat oven to 400 degrees F. Spray a baking sheet with nonstick cooking spray.
In a large bowl, whisk together the flour, sugar, baking powder and salt. With a pastry blender or a large fork, cut in the butter until the mixture resembles coarse crumbs. Stir in the chocolate chips. Mix in the orange juice to form a dough.
Turn out the dough on a floured surface. Pat or roll into a 9 inch circle about 1/2 inch thick. With a 2 1/2 inch fluted biscuit cutter, cut out 12 scones, pushing the dough scraps together for the last few, if necessary. Transfer the scones to the baking sheet.
Bake in preheated oven until golden brown, about 12 minutes. Move to wire racks to cool.
