Something To Blog About: Summer Healthy Dishes from NWAFoodie

 There is a local blogger, Lyndi, who blogs nwafoodie.blogspot.com.  She has a great blog full of tips on where to get special ingredients in NWA and shares recipes and other "foodie" tips! She is sharing two healthy summer dishes with us this week!


Basmati Rice with Sauted Yellow Squash and Zucchini


Basmati Rice with Sauted Yellow Squash and Zucchini
Serves 4
Ingredients
1 small yellow squash
1 small green zucchini
white or yellow onion, diced
1 tsp sea salt
tsp ground black pepper
2 tbsp olive oil
2 cups cooked basmati rice 
Instructions
1.            Cut the squash and zucchini in half, lengthwise and slice (will look like half moons).
2.            Heat skillet on stove on medium-high heat.
3.            Add olive oil.
4.            Add onions, squash and zucchini to skillet.  Cook until tender, about 10 minutes.
5.            Combine with rice.
6.            Salt and pepper to taste and serve.

Grilled Chicken Breast with Fresh Jalapeno-Cilantro Tomato Relish
Recipe adapted from my friend's (Nathan Willoughby) lime based hot dog relish
Serves 4
Ingredients
3 chicken breasts
1 tbsp olive oil
Salt and pepper
1 jalapeno, minced (seeds removed if you like it mild)
1 tomato, diced small
onion, diced small
cup of fresh cilantro, chopped
1 bunch of spring onions (4-5 individual bulbs with stalks), sliced diagonally
1 tbsp butter
2 tbsp sugar
Instructions - Grilled Chicken
1.     Preheat grill.
2.     Wash chicken.
