Kalua Filet Mignon

Kalua Filet Mignon
Served with Mango Salsa and Hoisin Demi
Accompanied by Okinawan Sweet Potato Banana Mash and Kalua Pork Crispy Ravioli w/ Sweet Chile Sauce
Kalua Filet Mignon (or any steak you want)
2 - 5x5 inch of Banana Leaf or 4 Ti Leaf
10 oz of Filet Mignon (or any steak you want)
Place Banana Leaf or Ti Leaf on the shelf of the smoker.
Place your choice of steak on the leaf.
Smoke the steak for 45 min, at 250 degrees, remove & let it rest. If it is too rare for your liking continue cooking it in the oven.
Hoisin Demi Glaze
cup beef stock
3 tablespoon merlot
1 clove of garlic fine chopped
1 teaspoon of chopped round onion
1 table spoon Hoisin Sauce
1/4 cup beef stock
Salt & pepper for taste
In sauce pan combine your beef stock,merlot, garlic & onion.
Simmer in low heat for 5 minutes, add hoisin sauce simmer for 2 minutes.
Spoon on the steak before serving.
Okinawan Sweet Potato Banana Mash
3 lbs.Okinawan sweet potato or regular yams
1 whole banana
1 teaspoon honey
3 oz butter
2 tablespoons whipping cream
Salt & pepper for taste
Place potato in a 350 degree oven for 45 minutes or until soft.
Place 1 whole banana in a 350 degree oven for 10 minutes or until soft.
In a food processor combine all ingredient, pulse until it reaches mashed potato consistency. Place in a serving bowl &enjoy!!

5 lbs. pork butt
1lbs. diced onion
1 tablespoon Liquid Smoke
2 tablespoon soy sauce
Wonton wrapper
