Springdale High School Dedicates Food Science Lab

Springdale High School students are using a new food science lab to learn the chemistry behind cooking.
The students and teachers welcomed food industry professionals to the kitchen Friday for a dedication.
Teacher Chad Burkett says the program is the first of its kind for a high school.
"It's not just a cooking class," Burkett says. "When they start looking at how we take whole foods and manipulate those foods to make different products, they really start to understand the science behind it."
Burkett says the three year program focuses on how the chemical and biological aspects of food affect flavor and taste.
The kids started with a lesson on food safety, but have also learned to process meat and to make canned pumpkin butter from scratch.
"We're looking at raw products and how those products get manipulated to an end product," Burkett says. "They really like a challenge, the more challenging the more interested they are."
