Cooking Today, Dec 29th, Seared Halibut

Ingredients
-2 eight ounce Halibut fillets
-corn oil
-salt & pepper
(Corn Relish)
-1 cup Allens cut corn
-1/4 cup red onions, diced
-1 tablespoon garlic
-1/2 cup red & green bell peppers, diced
-1/4 cup chopped pecans
-salt & pepper
Recipe
1. Season Halibut fillets with salt and pepper to taste. *The key to cooking fish is to make sure fish are dry before you start cooking, so pat fish with paper towel before seasoning.
2. Add corn oil to a pan on a stove top and heat. Add the Halibut fillets and cook them on each side for about 4 minutes, 8 minutes total cook time.
3. While Halibut fillets are cooking, make the corn relish. Take a mixing bowl and combine 1 cup of Allens cut corn, 1/4 cup of diced red onions, 1 tablespoon of garlic, 1/2 cup of diced red and green bell peppers, and 1/4 cup of chopped pecans. Mix together well.
4. Once Halibut fillets are finished, place on dinner plates and add relish. Serve with sides.
