Cooking Edge: Haupia-Filled Indian Fried Bread

Haupia-Filled (Coconut Pudding) Indian Fried Bread

For six servings

 

Fry Bread

2 cups of all-purpose flour

1 cup of milk

2 tablespoons of baking powder

1 teaspoon of vanilla

teaspoon of salt

cup of powdered sugar (garnish)

     Mix flour, baking powder and salt in a mixing bowl

     Add vanilla to the milk, then pour the milk into the dry mixture

     Mix with a dough hook (or knead with hands) in bowl until dough is mixed well

     Pinch off a golf-ball-size amount of dough, roll into a ball and drop dough into hot oil

     Dough is done when it is golden brown and center of dough is cooked

 

Hawaiian Filling

1 cups of coconut milk

1 cups of water

cup of sugar

cup of corn starch

cup of fresh pineapple

     In medium sauce pan, combine corn starch, sugar, water and coconut milk

     Stir over medium heat until thickened

     Stir in fresh pineapple

     Lower heat and continue for 10 minutes

     Pour into a pan and refrigerate until it thickens

 

Filling Fry Bread

     Fill piping bag with Hawaiian filling

     Stuff the tip into the bottom of the fry bread

     Roll stuffed bread into powdered sugar and serve
