She also is always making the best sounding food. I constantly hope to show up to her house for dinner when she writes about what she is making. She is sharing two of those recipes with us today!
Inspired by Pioneer Woman's rendition of California Pizza Kitchen's BBQ Chicken Pizza, this SYP version starts with my favorite crispy thin crust that has the most fabulous crunch! Then it's layered with BBQ chicken, fresh mozzarella, thin slices of red onion, cilantro and (drum roll please) crispy chopped bacon. I mean, if pizza doesn't have butter it at leastneeds bacon, don't you think? I'm telling ya, this pizza is restaurant quality delicious! Tons of flavor! And it is a feast for the eyes as well!
THIN AND CRISPY PIZZA CRUST

1 (.25 oz.) package dry yeast
1 tsp sugar
1 cup warm water
2.5 cups flour
2 T olive oil
1 tsp. salt
Preheat oven to 450 degrees and place rack on lowest rung. In a medium bowl, dissolve yeast and sugar in water. Let stand 10 minutes until creamy. Stir in flour, salt, and oil. {I put mine in my stand mixer with the dough hook.} Beat until smooth. Let rest five minutes. Turn out on a floured surface and knead just a little until incorporated and smooth. Roll into a large round, as thin as possible. Bake on lowest rack for 10 minutes on a pizza pan dusted with cornmeal. The crust will brown on the edges and will likely puff in a few places. Remove from oven and let stand for a few minutes or until you're ready to dress with toppings.
BBQ CHICKEN PIZZA
2 grilled chicken breasts
{we always throw extras on the grill and keep them for times like these!}
1/2 red onion, thinly sliced
16 oz. fresh mozzarella, thinly sliced {or shredded if you must}
4-5 slices of crisp cooked bacon, coursely chopped
1 cup of BBQ sauce
chopped fresh cilantro
Reduce oven heat to 400 degrees.
Cut grilled chicken breasts into bite-sized chunks and toss to coat in 1/2 cup BBQ sauce. When the crust has cooled about 7-8 minutes, layer on fresh mozzarella, chicken pieces, red onion, and chopped bacon. Drizzle the remaining 1/2 cup of BBQ sauce over the pizza toppings with a spoon. Bake in a 400 degree oven for 5 minutes on the lower oven rack, the moving to the middle-upper rack for 5 more minutes or until toppings are bubbly and delicious-looking! Watch the pizza closely as not to burn the cheese. Remove from oven and sprinkle the top with chopped fresh cilantro to taste. Slice and serve!

PUMPKIN BREAD CRACK

PUMPKIN BREAD CRACK
3 cups flour
1 1/2 cups sugar
1 cup brown sugar
2 tsp. baking soda
1 1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
(I substitute the cinnamon and nutmeg for 2 tsp. pumpkin pie spice)
1 cup oil
1 can cooked pumpkin
2/3 cup water
1/2 cup chopped walnuts (optional)
1 cup semi sweet chocolate chips
In a large bowl, combine all dry ingredients together.
Add the wet ingredients and mix well.
Add in the chic chips
Divide into two, greased and floured loaf pans.
Bake at 350 degrees for 50-60 minutes.
*I prefer 50 minutes for yummy moistness*
Cool 10-15 minutes in pans then invert and cool completely.
